When the weather turns cold, I always find myself craving a comforting bowl of Ramen.

It had been a while, but I finally made my way back to that memorable little spot that occasionally pops into my mind.

When it comes to ramen in Ebisu, the first place that comes to mind is Ayakawa, known for its handmade extra-thick noodles and rich mature-chicken chuka soba.

Back when they first opened, the line wasn’t very long, but as time passed, it felt like the queue kept getting longer and longer.

I headed over a little after 2 PM on a rainy holiday, thinking I’d be past the peak — but I definitely didn’t expect to see that many people still waiting.

An unexpectedly massive line. The photo was taken after I had already waited about 20–30 minutes, but at its peak there must have been around 35 people in line.

I almost gave up halfway through, but at that point my cravings were completely locked in on Ayakawa — so I took a deep breath and decided to tough it out and stay in line.

Compared to many other ramen spots, this place seems to attract more groups — couples, families, and friends — and on weekends you can tell plenty of people are making the trip from outside the neighborhood just for a bowl.

It had been two years since my last visit… now the only question was: what should I order this time?

The seasonal winter hot-pot style noodles were definitely tempting, but since it had been two years since my last visit, there was no way I could come here and not choose those signature handmade extra-thick noodles at Ayakawa.

Before long, I was guided to a counter seat. Watching the noodles being vigorously drained right in front of me — bold, energetic, almost theatrical — my anticipation kept building.

And then… the moment finally arrived.

Boom — bowl down.

A clear, amber-colored soup… gulp.

The flavor doesn’t hit all at once — it slowly seeps in, spreading gently across your taste buds with a delayed wave of umami. The richness from the chicken bones and the sharp edge of the soy sauce are beautifully balanced. It’s not the kind that leans heavily on chicken oil and feels heavy toward the end; instead, the deep savoriness of mature chicken seems to quietly build layer by layer as you drink.

Yes… this is it. Now I remember.

It’s the kind of soup that makes your mouth water more with every sip — probably because the lingering umami finish is so long and satisfying.

By default, the bowl comes with two kinds of chashu: chicken and pork.

The chicken uses mature hen, with a firm, pleasantly chewy texture that releases more flavor the more you bite into it. The pork, likely from the shoulder loin, is moist and lean, with just the faintest hint of a fruity aroma — almost like apples, or maybe just your imagination.

Altogether, it feels delicate, precise, and refined — the kind of careful craftsmanship you might expect from a high-end Japanese kitchen rather than a typical ramen shop at Ayakawa.

You can choose between medium-thick or extra-thick noodles.

The extra-thick ones are especially distinctive — wide and uneven, almost like kishimen, with a hand-torn look that gives them a rustic character.

As you bite in, the aroma of wheat gently blooms. Because the thickness varies from spot to spot, the texture has a natural rhythm — soft and chewy in one bite, firmer and more resilient in the next. There’s a satisfying elasticity paired with a powerful, springy chew. I really love this style.

I finished the bowl with such momentum that I nearly drank the entire soup, right down to the last drop.

What a meal — absolutely satisfying.
